Spinach & Pea Carbonara makes for an awesome weekend dinner

Spinach & Pea Carbonara Is Delightfully Beautiful

Spinach & Pea Carbonara is a creamy and luxurious delight that you can cherish with your family or even eat alone.

Ingredients :-

  • 1 cup peas (fresh or frozen)
  • 8 cups baby spinach
  • 1 package fresh tagliatelle or linguine
  • ¼ tsp salt
  • ½ tsp ground pepper
  • 1 large egg
  • 3 large egg yolks
  • 3 tbsp finely chopped fresh parsley
  • 8 tbsp grated Parmesan cheese
  • 1 small clove minced garlic
  • 1 ½ tbsp extra-virgin olive oil
  • ½ cup breadcrumbs

 

Method :-

  • Put 10 cups of water in a large saucepan and bring it to a boil.
  • Heat oil in a frying pan over medium flame. Add breadcrumbs and garlic and cook until toasted for about 2 minutes. Transfer to a bowl and stir in 2 tbsp parmesan and parsley. Leave it aside.
  • Whisk the remaining 6 tbsp parmesan, egg yolks, egg, pepper and salt in a bowl.
  • Cook pasta in the boiling water for 1 minute. Add spinach and peas and cook until the pasta is tender. Reserve 1/4 cup of the cooking water. Drain and place in a large bowl.
  • Whisk the reserved cooking water into the egg mixture. Then add the mixture to the pasta and toss to mix. Top with the reserved breadcrumb mixture and serve hot.
