“Cashew Chicken” if you have too many spare cashews
Ingredients :-
- 500 gm boneless chicken breasts, cut in cubes
- 2 tbsp cornstarch
- oil
- saltĀ
- pepper
- 5 tbsp chicken broth or water
- 3 tbsp hoisin sauce
- 1 tbsp soy sauce
- 1 tbsp white vinegar
- 1 tbsp honey
- 1/2 tsp sesame oil
- 3 chopped green onions
- 4 cloves minced garlic
- 1 tbsp grated ginger
- 1 cup diced broccoli florets
- 1 chopped red bell pepper
- 1/2 cup roasted chopped unsalted cashews
- Sesame seeds (optional)
Method :-
- Coat chicken cubes with 1 tbsp cornstarch in a bowl and leave aside.
- Heat oil in a frying pan and add the chicken cubes and cook for a few minutes until golden brown. Drain the chicken on paper napkins.
- Mix soy sauce, vinegar, honey, sesame oil, chicken broth, hoisin sauce and the remaining cornstarch in a bowl.
- Heat oil in a frying pan and add green onions, garlic, ginger, broccoli and red bell pepper and saute for a couple of minutes.
- Pour the sauce mixture to the vegetables and cook until the sauce thickens.
- Add the chicken and cashews to the above vegetable mixture.
- Garnish with sesame seeds and green onions.
- Serve your Cashew Chicken hot.
