Chicken Soup Will Nourish Your Soul

Chicken Soup is a homemade quick healthy alternative that you can occasionally treat your entire family to when you are about to initiate a difficult conversation.

Ingredients :-

  • 2 pounds bone-in chicken breasts, skin removed
  • 8 cups chicken broth
  • ¼ cup chopped fresh parsley
  • 2 cups sliced carrots
  • 2 cups sliced celery
  • 1 ¼ tsp salt
  • 2 cups frozen peas
  • ½ tsp ground pepper
  • 3 cups cooked egg noodles
  • 1 tbsp chopped fresh thyme or 1 tsp dried
  • 2 tbsp olive oil
  • 1 bay leaf
  • 2 large cloves garlic, minced
  • 1 cup chopped onion

 

Method :-

  • Heat oil in a saucepan over medium heat. Add onion and garlic and cook until softened for about 3 minutes. Add thyme and bay leaf and cook for about 1 minute. Add broth and chicken and cover and bring it to a simmer. Uncover and cook for about 25 minutes. Remove any foam from the surface as the chicken cooks. Transfer the chicken to a cutting board. Remove the meat from the bones and shred when cool.
  • Add celery, carrots and peas to the saucepan and return to a simmer. Cook until the vegetables are tender for about 10 minutes. Stir in the shredded chicken, salt, pepper and noodles and cook for 3 minutes more. Remove from heat and add parsley and serve hot.
