Smoky Butternut Squash Soup is a super gooey soup combining canned chipotle chiles in adobo sauce with a swirl of crème fraîche for a delightful supper.

Smoky Butternut Squash Soup

Ingredients :-

  • 2 tbsp unsalted butter
  • 8 cups butternut squash, peeled and diced
  • 2 tbsp honey
  • Salt
  • 1 medium onion, finely chopped
  • 1 cup crème fraîche
  • 7 cups chicken or turkey stock or low-sodium broth
  • 1/4 cup finely chopped chives, plus more for garnish
  • 1 small canned chipotle in adobo, chopped

 

Method :-

  • Melt butter in a large pot. Add the onion and cook over moderate flame until softened. Stir in the squash and chipotle and cook for about a minute. Add the stock and honey and bring it to a boil. Simmer until the squash is tender for about 30 minutes.
  • Puree the soup until smooth and season with salt.
  • Stir the crème fraîche with the 1/4 cup of chives in a microwave-proof bowl.  Microwave until just melted for 30 seconds.
  • Serve the soup with a swirl of chive cream and a sprinkling of chives.
