The Carrot Cake That Made a Saturday Special

There are certain recipes that seem to belong to weekends, and carrot cake has become one of those in my home.

A few months ago, on a Saturday morning, I woke up without anywhere I needed to be. The house was unusually quiet, there was a pot of tea brewing in the kitchen, and the week’s groceries were still sitting on the counter waiting to be put away. Among them was a bag of carrots that had been sitting in the fridge for a few days.

For some reason, that morning felt like the perfect time to bake.

I grated the carrots, put on some music and slowly worked my way through the recipe while finishing my second cup of tea. There was something wonderfully unhurried about it. No checking the clock, no rushing through the steps, just the smell of cinnamon and vanilla filling the kitchen as the cake baked.

By late morning, the cake was cooling on the counter. A friend happened to drop by, and what was meant to be a quick cup of tea turned into a much longer conversation at the dining table. We cut ourselves generous slices, added an extra spoonful of frosting and ended up talking for nearly two hours.

That afternoon made me realise why I love weekend baking so much. It isn’t really about the cake. It is about creating a small pause in the week, a reason to slow down, put the kettle on and make time for people.

Since then, carrot cake has become part of my weekend ritual. Sometimes it is made for friends, sometimes for family, and sometimes simply because there is nothing better than having a homemade cake waiting in the kitchen for the afternoon tea break.

This version is soft, warmly spiced and topped with a creamy frosting. It is comforting without being fussy, and it tastes even better when shared around a table with a pot of tea and nowhere else to be.

Here’s the carrot cake recipe I like to make when the weekend calls for something homemade.

Carrot Cake (for 2 8inch cake pans)

  • 300g flour (or 330g T55 flour)
  • 8g baking powder
  • 4g baking soda
  • 4g salt
  • 4g ground cinnamon
  • 1g ground nutmeg
  • 300g non flavored oil
  • 100g dark brown sugar
  • 280g sugar
  • 4 eggs room temperature
  • 12g vanilla extract
  • 300g grated carrots

Peel & grate carrots. In a big bowl, whisk dry ingredients well. In another bowl, whisk oil, sugars, eggs, & vanilla till combined. Add this mixture into the dry ingredients & fold the mixture till small traces of flour remain. Add the carrots & fold in till just combined. Do not over mix batter.

Pour evenly into greased cake pans with parchment paper (about 800 grams each), & bake in preheated oven at 350F/180C for 30-35 minutes or until toothpick inserted comes out clean or when cake is touched, it springs back. Leave to completely cool.

Cream Cheese Icing

  • 340 g unsalted butter, room temperature
  • 600-700 g powdered sugar, sifted
  • 1–2 tsp cornstarch
  • 1 tsp vanilla extract
  • Pinch of salt
  • 340 g cream cheese(cold)

Beat the butter, powdered sugar, cornstarch, and salt on medium speed for 2–3 minutes until light, fluffy & smooth.

Add vanilla extract

Add cream cheese on low speed & mix till just combined.

*Do not overbeat or risk icing becoming runny. If frosting feels soft, refrigerate 10–15 minutes.
