Spaghetti Aglio e Olio is a delicious Italian dish

Simple ingredients to make the recipe

Spaghetti (linguine or fettuccine will also work), high quality extra virgin olive oil, garlic, Kosher salt, crushed red pepper flakes are the basic ingredients you will need for this Italian beauty. Two optional toppings for this classic Italian dish are finely-minced fresh parsley and r freshly-grated Parmesan.

The Secret Aglio Sauce

The secret to the creamy texture lies in a good quality extra virgin olive oil and the starchy water the pasta was cooked, acting as a thickener creating a silky and dense sauce along with the olive oil.

Steps to cook the perfect Italian Spaghetti Aglio E Olio
  • Cook the spaghetti.
  • Sauté the garlic in olive oil.
  • Toss the pasta.
  • Season the pasta.
  • Serve.

You can make a number of variations with this simple Aglio E Olio recipe. Add some anchovies, basil, roasted tomatoes, sauteed asparagus, chicken or any cooked vegetables like broccoli, mushrooms, bell peppers, onion for a pasta of your choice. The recipe is best cherished in it’s original form.

Ingredients :-
  • 300g spaghetti
  • 4 garlic gloves
  • 1 red chili pepper
  • 1/4 bunch fresh parsley
  • 1/3 cup  olive oil
  • Salt
  • Freshly ground pepper
Method :-
  • Slice garlic cloves, chili pepper and chop parsley.
  • Add 1 tbsp salt to a large bowl of boiling water and then the spaghetti and cook according to the directions on the package.
  • Add olive oil, slices garlic cloves and chili to a large frying pan and cook over medium flame, stirring frequently, until the garlic just begins to turn golden on the edges.
  • Leave aside 1 cup of the pasta cooking water before you drain the pasta.
  • Add the drained pasta to the frying pan above, sprinkle with salt, freshly ground black pepper and stir. Add the cooking water and stir continuously. Turn off the heat and add the parsley and give a final stir before transferring to a plate and serving with parmesan.

 

You can complement Spaghetti Aglio E Olio with a Caesar Salad or Tomato and Cucumber Salad along with some focaccia. You can also serve with Baked Chicken Breasts.
