Sauteed Chicken Breasts With Creamy Chive Sauce
Sauteed Chicken Breasts With Creamy Chive Sauce is a great community recipe to try your hands on over a weekend dinner with the enticing flavors of chives, sour cream, shallots and mustard.
Ingredients :-
- 4 boneless chicken breasts
- 1 tsp kosher salt, divided
- 1 can chicken broth
- ⅓ cup low-fat sour cream
- 1 tbsp Dijon mustard
- 1/2 cup chopped chives
- 2 large finely chopped shallots
- ½ cup dry white wine
- 1/4 cup plus 1 tbsp all-purpose flour, divided
- 3 tsp olive oil, divided
Method :-
- Pound chicken breasts with a meat mallet by placing chicken between sheets of plastic wrap until evenly flattened. Season both sides of the chicken with 1/2 tsp salt. Place 1/4 cup flour in a baking dish and dredge the chicken in it. Discard the excess flour.
- Heat 2 tsp oil in a large non-stick frying pan over medium flame. Add the chicken and cook until golden brown on each side. Transfer to a plate and leave it covered.
- Heat the remaining 1 tsp oil in the pan over medium flame. Add shallots until golden brown for a couple of minutes. Sprinkle with the remaining 1 tbsp flour and mix gently to coat. Add wine, broth and the remaining 1/2 tsp salt and bring it to a boil.
- Return the chicken and the accumulated juices to the pan and simmer and cook for about 5 minutes over low flame. Add sour cream and mustard and stir until smooth and coat the chicken with the sauce. Garnish with chives and serve hot.
