Roasted Red Pepper, Spinach & Feta Penne Pasta Is Your 4AM Friend
Roasted Red Pepper, Spinach & Feta Penne Pasta is a recipe that can be made in less than half an hour combining penne pasta with garlic, spinach and roasted red peppers topped with crumbled feta cheese for a quick delicacy to be cherished with friends.
Ingredients :-
- 2 cups penne
- 3 large cloves garlic, sliced
- ½ tsp salt
- 1 jar roasted red peppers, drained and chopped
- ¼ cup olive oil
- ¾ cup crumbled feta cheese
- 1 package baby spinach
- ½ tsp ground pepper
Method :-
- Bring a saucepan of water to a boil and cook penne according to package directions. Drain and return to pot.
- Heat oil in a frying pan over medium flame. Add garlic and cook until fragrant. Ensure that you don’t overcook. Add roasted red peppers, spinach, salt and pepper and cook until the spinach is just wilted for about 5 minutes.
- Mix the vegetable mixture with the penne. Garnish with feta and serve.
