Cherry Tomato & Garlic Pasta Is Colorful & Aromatic

Cherry Tomato & Garlic Pasta is a healthy aromatic delicacy that can be quickly wrapped up for a weekend dinner saving you a lot of preparation time. The garlic flavor and cherry tomatoes create a harmonious fusion of a perfect salivating Italian experience.

Ingredients :-

  • 2 cups penne pasta
  • ¼ cup finely grated Parmesan cheese
  • 1 medium yellow squash, halved and sliced
  • 1 cup chopped fresh basil
  • 1 cup mini mozzarella balls
  • 2 tbsp olive oil
  • 2 cups cherry tomatoes
  • ¾ tsp salt
  • 6 cloves garlic, peeled

 

Method :-

  • Bring a saucepan of water to a boil. Add pasta and cook according to package directions. Reserve 1/4 cup cooking water and drain the pasta and leave aside.
  • Heat oil in a non-stick frying pan over medium flame. Add garlic and cook until tender and light golden for about 3 minutes. Add tomatoes, squash and salt and cook for about 5 minutes. Lightly mash the garlic and remove from heat.
  • Add the pasta and reserved cooking water to the pan along with basil and mozzarella and toss gently. Garnish with Parmesan and serve hot.
