Mushroom And Chicken Pad Thai Noodles is a classic Pad Thai delicacy with chicken and shiitake mushrooms combined carefully with a bunch of other premium aromatic ingredients.
Ingredients :-
- 10 ounces chicken breast, thinly sliced
- 5 ounces shiitake mushrooms, sliced
- 1 ½ tablespoons tamarind purée
- 2 tablespoons fish sauce
- 1 ½ tablespoons oyster sauce
- 5 ounces dried rice noodles
- 2 garlic cloves, finely chopped
- 2 large eggs
- 2 tablespoons cooking oil
- ½ onion, thinly sliced
- 1 ½ cups bean sprouts, divided
- 1 lime, cut into wedges
- 16 stems fresh cilantro
- 3 tablespoons brown sugar
- ¼ cup scallions, finely chopped
- ¼ cup finely chopped peanuts
Method :-
- Mix tamarind purée, brown sugar, fish sauce and oyster sauce In a bowl to make the pad Thai sauce and set it aside.
- Add the rice noodles to a bowl and cover with hot water. Allow the noodles to sit for for a couple of minutes until they are al dente and then drain them. Rinse them in cold water to stop the cooking process and then set them aside.
- Lightly beat two eggs in a bowl and leave aside.
- Heat a large frying pan to high flame. Add oil, sliced onion, thinly sliced chicken breast, chopped shiitake mushrooms and garlic cloves. Stir fry everything until the chicken is just cooked.
- Add eggs to the pan and scramble them and then add 1 cup of bean sprouts, finely sliced scallions and prepared rice noodles. Pour over the Pad Thai sauce and then toss everything together.
- Garnish with the remaining bean sprouts, chopped peanuts, lime wedges, and fresh cilantro before serving hot.
