Mediterranean Chicken Panini Is A Healthy Choice
Mediterranean Chicken Panini is a healthy sandwich made with chicken breasts, oregano, garlic, vinegar, zucchini to name a few.
Ingredients :-
- Olive oil
- 3 cups boneless chicken breasts
- ⅓ cup dried tomatoes
- 3 tbsp boiling water
- ⅓ cup drained bottled roasted red sweet peppers
- 4 tsp balsamic vinegar
- 1/2 tsp dried crushed oregano
- 1 large clove minced garlic
- ⅛ tsp ground black pepper
- 1 small zucchini
- 4 miniature bagel breads split
Method :-
- Lightly coat a non-stick frying pan with olive oil. Add chicken and cook over medium flame for 15 minutes until cooked. Cool chicken and cut into 2-inch-wide slices.
- Mix dried tomatoes and boiling water in a bowl and let it stand for 5 minutes. Transfer undrained tomato mixture to a mixer and add roasted red sweet peppers, balsamic vinegar, oregano, large clove garlic, and ground black pepper. Cover and process until smooth.
- Spread the dried tomato-pepper spread on cut sides of bagel bread squares. Place chicken on bottoms of the bread squares. Place zucchini strips on top of the chicken. Place bagel square tops on top of the zucchini and press down lightly.
- Add olive oil to a grill pan and place the sandwiches and cook until both the sides are toasted. Serve immediately.
