Lemon Chicken Pasta With Spinach is a simple weeknight dinner combining chicken breasts and sautéed spinach for a delicious and cheesy dish your family would love.

Lemon Chicken Pasta With Spinach

Ingredients :-

  • 1 cup penne pasta
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • ½ cup dry white wine
  • Juice and zest of 1 lemon
  • 1 pound boneless chicken breast, trimmed and cut into bite-size pieces
  • 10 cups chopped fresh spinach
  • 4 tbsp grated Parmesan cheese, divided
  • ½ tsp salt
  • ¼ tsp ground pepper

 

Method :-

  • Cook pasta according to package instructions. Drain and leave aside.
  • Heat oil in a large non-stick frying pan over medium-high flame. Add chicken, salt and pepper and cook until just cooked through for about 6 minutes. Add garlic and cook until fragrant for about 1 minute. Stir in wine, lemon juice and zest and bring to a simmer.
  • Remove from heat. Stir in spinach and the cooked pasta. Cover and let it stand until the spinach is just wilted. Divide among 4 plates and top each serving with 1 tbsp Parmesan.
  • Serve hot.
