Lemon Chicken Pasta With Spinach is a simple weeknight dinner combining chicken breasts and sautéed spinach for a delicious and cheesy dish your family would love.
Ingredients :-
- 1 cup penne pasta
- 2 tbsp olive oil
- 4 cloves garlic, minced
- ½ cup dry white wine
- Juice and zest of 1 lemon
- 1 pound boneless chicken breast, trimmed and cut into bite-size pieces
- 10 cups chopped fresh spinach
- 4 tbsp grated Parmesan cheese, divided
- ½ tsp salt
- ¼ tsp ground pepper
Method :-
- Cook pasta according to package instructions. Drain and leave aside.
- Heat oil in a large non-stick frying pan over medium-high flame. Add chicken, salt and pepper and cook until just cooked through for about 6 minutes. Add garlic and cook until fragrant for about 1 minute. Stir in wine, lemon juice and zest and bring to a simmer.
- Remove from heat. Stir in spinach and the cooked pasta. Cover and let it stand until the spinach is just wilted. Divide among 4 plates and top each serving with 1 tbsp Parmesan.
- Serve hot.
