Grilled Chicken Taco Salad Will Soon Become Your Family Favorite
Grilled Chicken Taco Salad is a quick and healthy alternative loaded with nutritious vegetables and will keep you full for a long time.
Ingredients :-
- 2 tbsp lime juice
- 2 tbsp white wine vinegar
- Salt
- Pepper
- ¼ olive oil
- 1 cup cherry tomatoes, halved
- ¾ cup diced zucchini
- 1 avocado, diced
- ¼ cup thinly sliced red onion
- 1 minced jalapeno
- 2 pounds boneless chicken breast
- 1 ear corn
- 5 cups arugula
- 1 cup broken tortilla chips
- 2 tbsp chopped coriander
Method :-
- Preheat grill to medium-high.
- Mix lime juice, vinegar and 1/2 tsp each salt and pepper in a bowl.
- Whisk in oil and then add tomatoes, zucchini, avocado, onion and jalapeño and toss to coat and leave aside.
- Season chicken with the remaining 1/4 tsp each salt and pepper.
- Oil the grill rack. Grill the chicken until cooked. Grill corn separately until lightly charred. Transfer to a cutting board. Cut the chicken into bite-size pieces and cut corn kernels from the cob.
- Add the chicken and corn to the tomato mixture and stir in arugula, tortilla chips and coriander and gently toss before serving fresh.
