Grilled Chicken Taco Salad is a great starter

Grilled Chicken Taco Salad Will Soon Become Your Family Favorite

Grilled Chicken Taco Salad is a quick and healthy alternative loaded with nutritious vegetables and will keep you full for a long time.

Ingredients :-

  • 2 tbsp lime juice
  • 2 tbsp white wine vinegar
  • Salt
  • Pepper
  • ¼ olive oil
  • 1 cup cherry tomatoes, halved
  • ¾ cup diced zucchini
  • 1 avocado, diced
  • ¼ cup thinly sliced red onion
  • 1 minced jalapeno
  • 2 pounds boneless chicken breast
  • 1 ear corn
  • 5 cups arugula
  • 1 cup broken tortilla chips
  • 2 tbsp chopped coriander

 

Method :-

  • Preheat grill to medium-high.
  • Mix lime juice, vinegar and 1/2 tsp each salt and pepper in a bowl.
  • Whisk in oil and then add tomatoes, zucchini, avocado, onion and jalapeño and toss to coat and leave aside.
  • Season chicken with the remaining 1/4 tsp each salt and pepper.
  • Oil the grill rack. Grill the chicken until cooked. Grill corn separately until lightly charred. Transfer to a cutting board. Cut the chicken into bite-size pieces and cut corn kernels from the cob.
  • Add the chicken and corn to the tomato mixture and stir in arugula, tortilla chips and coriander and gently toss before serving fresh.
