Creamy Chicken & Mushrooms Is A Quick Delight
Creamy Chicken & Mushrooms makes for a quick dinner with a thinly coated chicken breast with an awesome gooey mushroom sauce.
Ingredients :-
- 4 cups mixed mushrooms, sliced
- ½ cup dry white wine
- ½ cup heavy cream
- 2 tbsp finely chopped fresh parsley
- 4 chicken cutlets
- Kosher salt
- Pepper
- Oil
Method :-
- Sprinkle chicken with 1/4 teaspoon each kosher salt and pepper. Heat 1 tbsp oil in a non-stick frying pan over medium flame. Cook the chicken for 10 minutes until brown and then transfer to a plate.
- Add 1 tbsp oil and mushrooms to the pan and cook for about 4 minutes until the liquid has evaporated. Increase heat to high and add wine and cook until it has mostly evaporated for about 4 minutes. Reduce heat to medium and stir in cream, any accumulated juice from the chicken and 1/4 tsp each salt and pepper. Return the chicken to the pan and turn to coat with the sauce. Serve the chicken topped with sauce and sprinkle with parsley before serving hot.
