Chickpea Pasta with Lemony-Parsley Pesto Is Fresh and Zesty
Chickpea Pasta with Lemony-Parsley Pesto is a healthy chickpea pasta recipe combining roasted vegetables and a fresh lemon-parsley pesto for an appetizing meal.
Ingredients :-
- 1 and /4 cups chickpea penne or other penne pasta
- 3 cloves garlic
- 1 tsp lemon zest
- ⅓ cup olive oil
- 4 and 1/2 cups flat-leaf parsley
- 2 tbsp lemon juice
- ½ tsp kosher salt
- ¼ tsp ground black pepper
- 1 and 1/2 cups roasted root vegetables
Method :-
- Cook pasta according to package directions and drain well.
- Mix parsley and garlic in a food processor until uniformly chopped. Add oil, lemon juice, salt and pepper and puree until just combined for a few seconds.
- Heat 1 tsp olive oil in a non-stick frying pan over medium flame. Add vegetables and cook for about 5 minutes.
- Toss the hot pasta with the pesto, the vegetables and lemon zest. Garnish with parsley and serve immediately.
