Chickpea Pasta with Lemony-Parsley Pesto Is Fresh and Zesty

Chickpea Pasta with Lemony-Parsley Pesto is a healthy chickpea pasta recipe combining roasted vegetables and a fresh lemon-parsley pesto for an appetizing meal.

Ingredients :-

  • 1 and /4 cups chickpea penne or other penne pasta
  • 3 cloves garlic
  • 1 tsp lemon zest
  • ⅓ cup  olive oil
  • 4 and 1/2 cups flat-leaf parsley
  • 2 tbsp lemon juice
  • ½ tsp kosher salt
  • ¼ tsp ground black pepper
  • 1 and 1/2 cups roasted root vegetables

 

Method :-

  • Cook pasta according to package directions and drain well.
  • Mix parsley and garlic in a food processor until uniformly chopped. Add oil, lemon juice, salt and pepper and puree until just combined for a few seconds.
  • Heat 1 tsp olive oil in a non-stick frying pan over medium flame. Add vegetables and cook for about 5 minutes.
  • Toss the hot pasta with the pesto, the vegetables and lemon zest. Garnish with parsley and serve immediately.
