Chicken and Wild Rice Casserole Is Healthy and Good For Your Weight Loss

Chicken and Wild Rice Casserole is a quick and healthy meal which keeps you full for a very long time without leaving you wanting for more. 

Ingredients :-

  • Butter-flavor cooking spray
  • 2 tsp dried parsley flakes
  • ½ cup soft whole wheat bread crumbs
  • 1 can cream of mushroom soup
  • 1 can semi-soft cheese with garlic and herbs, softened
  • 1 tbsp green onion or shallot
  • 1 can sliced mushrooms, drained
  • 4 cups cubed cooked chicken breast
  • 1  can bean sprouts, rinsed and drained
  • ½ cup boiled milk
  • ½ cup coarsely shredded carrot
  • ⅔ cup thinly sliced celery
  • 1 cup cooked wild rice

 

Method :-

  • Preheat oven to 350 degrees F. Whisk together cream of mushroom soup, cheese and milk until smooth in a bowl. Stir in bean sprouts, chicken, wild rice, celery, carrot, mushrooms and green onion. Spoon into a 2-quart casserole. Cover with foil and bake for 30 minutes.
  • Meanwhile, in a separate bowl, mix breadcrumbs and dried parsley flakes and coat lightly with nonstick cooking spray. Toss gently and coat again with nonstick cooking spray. Sprinkle over the casserole. Bake uncovered for 25 minutes or until filling is bubbly and topping is golden brown. Serve hot.
