Asparagus & Feta Quiche Is A Quick Delight
Asparagus & Feta Quiche tastes even better when combined with feta and seasoned with Mediterranean herbs for a sumptuous lunch.
Ingredients :-
- 1 (9 inch) frozen prepared pie crust
- 2 cups asparagus spears, trimmed and cut into pieces
- ½ cup crumbled feta cheese
- 4 large eggs
- 1 ¼ cups whole milk
- ⅛ tsp ground pepper
- ¼ tsp salt
Method :-
- Preheat oven to 375°F. Set out pie crust to thaw for 10 to 20 minutes.
- Place asparagus in a microwave-safe dish and add 1/4 inch water. Cover tightly and microwave on until crisp-tender and bright green for about 2 minutes and drain. Transfer to the pie crust and sprinkle with feta.
- Whisk eggs, milk, salt and pepper in a bowl and pour over the asparagus and feta in the crust.
- Set the quiche on a baking sheet and bake until the center is set for about 40 minutes. Let it stand for 10 minutes before slicing. Serve immediately.
