Zucchini, Mozzarella & Basil Frittata Is A Breakfast Winner

Zucchini Mozzarella & Basil Frittata recipe is one of the easiest meals to make for breakfast served with salad and olive oil-drizzled crusty baguettes.

Ingredients :-

  • 2 tbsp olive oil
  • 1 ½ cups thinly sliced red onion
  • 1 ½ cups chopped zucchini
  • 7 large eggs, beaten
  • ½ tsp salt
  • ¼ tsp freshly ground pepper
  • ⅔ cup fresh mozzarella balls
  • 3 tbsp chopped soft sun-dried tomatoes
  • ¼ cup thinly sliced fresh basil

 

Method :-

  • Position rack in upper third of oven and preheat broiler.
  • Heat oil in a large broiler-safe nonstick pan over medium flame. Add onion and zucchini and cook until soft for 5 minutes.
  • Whisk eggs, salt and pepper in a bowl. Pour the mixture over the vegetables in the pan. Cook for 2 minutes, lifting the edges to allow uncooked egg from the middle to flow underneath. Arrange mozzarella and sun-dried tomatoes on top and place the pan under the broiler until the eggs are slightly browned for about 2 minutes. Let it stand for 3 minutes. Top with basil.
  • Run a spatula around the edge, then underneath until it can be lifted out onto a serving plate. Cut into 4 slices and serve.
