Potato-Pear Latkes Will Make You Feel Like You Are In Europe
Potato-Pear Latkes are quick and easy to make appetizers giving the traditional Eastern European cuisine a herbal sweetness of pears and sage with the tart of sour cream.
Ingredients :-
- 1/2 kg potatoes, shredded
- 1 large beaten egg
- 3 tbsp canola oil, divided
- 2 6-inch-square pieces matzo, crushed
- 2 tsp finely chopped fresh sage
- 1 large firm (slightly underripe) pear, shredded
- 1 medium finely chopped shallot
- 1 tsp salt
- ¼ tsp freshly ground pepper
Method :-
- Toss potatoes, pear and matzo in a bowl and let it stand until the matzo is softened, for about 20 minutes. Add shallot, sage, salt and pepper and mix gently. Then add egg and stir to coat.
- Place a baking sheet in the oven and preheat to 200 degrees F.
- Heat 1 tbsp oil in a non-stick frying pan over medium flame and cook 4 latkes at a time using 1/4 cup lightly packed potato-pear mixture for each. Flatten with the back of a spatula into a 3-inch cake. Cook until crispy and golden for about 3 minutes per side. Transfer to the baking sheet in the oven to keep warm. Repeat with the remaining potato mixture and oil.
- Serve the latkes topped with a dollop of sour cream or enjoy them just like that.
