Creamy White Chili with Cream Cheese Will Make You Extremely Grateful
Creamy White Chili with Cream Cheese is a creamy and nutritious combination of white chicken chili and beans which makes for a mildly spicy weekend dinner.
Ingredients :-
- 1 tbsp oil
- 1 pound boneless chicken thighs, cut into bite-size pieces
- 1 tsp ground cumin
- 5 cloves garlic, chopped (2 tablespoons)
- ¾ cup chopped celery (2 medium stalks)
- 1 ½ cups chopped yellow onion (1 medium)
- 2 cans unsalted great northern beans, rinsed, divided
- ½ cup fresh coriander leaves
- 1 can cream cheese
- 1 can chopped green chillies
- 3 cups unsalted chicken stock
- Salt
Method :-
- Mash 1 cup beans in a bowl.
- Heat oil in a large over high flame. Add chicken and cook for 5 minutes until tender and brown. Add onion, celery, garlic, cumin and salt. Cook until the onion is translucent for about 5 minutes.
- Add the remaining whole beans, the mashed beans, stock and chillies. Bring it to a boil. Reduce heat and simmer until the chicken is cooked for about 3 minutes. Remove from heat and stir in cream cheese until melted. Garnish with coriander and serve hot.
