Creamy Baked Mac and Cheese Needs No Company
Creamy Baked Mac and Cheese is thick, dense and rich in cheese and can be made at home even when you are running short of time.
Ingredients :-
- 1 pound macaroni
- 2 1/2 cups heavy cream
- Kosher salt
- 1/4 tsp cayenne pepper
- 1 pound cream cheese
- 3 cups shredded cheddar
- 1 cup shredded gruyere cheese
- 1 cup breadcrumbs
- 4 tbsp melted unsalted butter
Method :-
- Set an oven rack 6 inches from the heat source. Preheat the oven to 425 degrees F.
- Heat water in a bowl and add salt and bring it to a boil. Add the macaroni and cook for 5 minutes until it is al dente, then, strain reserving 1 and 3/4 cups of the pasta water and leave it aside.
- Heat the heavy cream and cayenne in a large saucepan over medium heat until it simmers and reduces to 1 and 1/2 cups. Add the cream cheese and stir until melted. Whisk the cheddar and gruyere until the cheese is melted and smooth.
- Add the macaroni and pasta water to the saucepan and stir to mix. Season with salt. Pour into a baking dish.
- Toss the breadcrumbs with butter and salt in a bowl and pour evenly over the top of the macaroni and cheese. Bake for 15 minutes until the breadcrumbs are lightly browned and the cheese melts. Serve hot.
