Chicken With Cranberry Sauce is a delicious and simple dinner recipe to cook in less than half an hour with chicken breasts baked with tangy cranberry dressing.
Ingredients :-
- 1 cup finely chopped onion
- 1/2 tsp dried sage
- 2 tbsp butter
- 1 and 1/2 tsp dried thyme
- 1/4 cup sugar
- 1 tsp cornstarch (mixed with 1 tbsp water)
- 4 bone-in chicken breasts, skinless
- 2 cups chicken broth
- Coarse salt and ground pepper
- 1 cup cranberries
Method :-
- Preheat oven to 450 degrees. Mix 1 tbsp butter, 1 tsp thyme, 1/2 tsp salt, and 1/4 tsp pepper in a bowl. Rub evenly under chicken skin. Place on a rimmed baking sheet and roast the chicken until golden brown for about 25 minutes.
- Melt remaining tbsp butter in a saucepan over medium flame. Cook onion until golden for about 10 minutes. Add sage and remaining 1/2 tsp thyme and cook for about 1 minute. Add broth and simmer until reduced to 1 and 1/2 cups for about 15 minutes. Strain mixture and return to saucepan.
- Add cranberries and sugar and boil until berries burst for 10 minutes. Whisk in cornstarch mixture and return to a boil. Cook until slightly thickened for about a couple of minutes. Remove from heat and let the sauce stand until it thickens. Season with salt and pepper. Gently pour sauce over chicken and serve hot.
