Chicken Parmesan Sandwich Is The Show-Stopper Today
Chicken Parmesan Sandwich is best served with caesar salad, steamed broccoli or asparagus with Parmesan or garlic mashed potatoes.
Ingredients :-
- 2 large boneless chicken breasts cut into half
- 4 tsp olive oil
- 1/2 cup baby spinach
- 1/2 tsp kosher salt
- 1/2 tsp freshly ground pepper
- 1 cup marinara sauce
- 1/4 cup grated parmesan cheese
- 1/2 cup shredded mozzarella
- 4 toasted breads
Method :-
- Place oven rack on top and preheat grill to medium-high.
- Mix all-purpose flour, salt and pepper in a plate. Place chicken between 2 large pieces of plastic wrap and pound with the smooth side of a meat mallet until the chicken is even. Dip the chicken in the flour mixture to coat.
- Heat 2 tsp oil in a non-stick frying pan over medium heat. Add spinach and cook until wilted and transfer it to a bowl.
- Add 1 tsp oil to the pan. Add half the chicken and cook both sides until golden. Transfer to a large baking sheet. Repeat the process with the remaining chicken.
- Top each piece of chicken with the wilted spinach, marinara sauce and parmesan cheese. Sprinkle with mozzarella. Grill until the cheese is melted and the chicken is cooked for about 3-4 minutes before serving hot.
