Chicken Paillards With Fresh Greens And Beans is the perfect go-to dinner with fresh lettuce piled aloft with herb-infused chicken breasts.
Ingredients :-
- 1 cup trimmed string beans, sliced lengthwise
- 2 boneless chicken breast halves
- 1 tbsp olive oil, plus more for rubbing
- Coarse salt
- Ground pepper
- 16 sage leaves
- 1/2 cup dry-cured ham (finely chopped)
- ½ sliced red onion
- 1 tbsp red-wine vinegar
- 3 cups lettuce
Method :-
- Steam string beans until al dente for 4 minutes and drain.
- Slice chicken breast halves in half horizontally and pound lightly until it thickens.
- Rub paillards with olive oil and season with salt and pepper. Top each with 2 sage leaves. Saute in a non-stick frying pan over high flame for 3 minutes. Flip and top each with 2 more sage leaves. Heat until cooked through for about 3 minutes, then, transfer to a platter.
- Heat 1 tbsp oil in a pan over high flame. Cook ham for 1 minute. Add red onion and cook until soft for about 3 minutes.
- Add red-wine vinegar and stir in beans. Toss with lettuce. Serve over paillards.
