Chicken Marsala With Sage And Cremini Mushrooms

Ingredients :-

  • 4 boneless chicken breast halves
  • 1 and 1/2 cup cremini mushrooms, trimmed and thinly sliced
  • 2 tbsp all-purpose flour
  • Coarse salt
  • Ground pepper
  • 1 tbsp finely chopped fresh sage, plus more for garnish
  • ½ cup sweet Marsala wine
  • 1 tbsp olive oil
  • 1 minced shallot
  • ¼ cup heavy cream
  • 1 tbsp butter

Method :-

  • Place all-purpose flour in a bowl and season with salt and pepper. Dredge each piece of chicken in flour, shaking off excess.
  • Heat oil in a non-stick frying pan over medium flame. Add chicken and cook each side until golden. Transfer to a plate and cover with aluminum foil to keep warm.
  • Add mushrooms, shallot, sage and 1/4 cup water to the frying pan and season with salt and pepper. Toss and cook until the mushrooms are tender for about 5 minutes. Add wine and cream and simmer over medium-high flame until slightly thickened for another 5 minutes. Remove from heat and stir in butter and season with salt and pepper.
  • Top chicken with mushroom sauce and garnish with sage before serving hot.
