Chicken & Cauliflower Stir Fry – In case you don’t have broccoli
Ingredients :-
- 500 gm boneless chicken cubes
- oil
- 2 cups small cauliflower florets
- 3/4 cup sliced mushrooms
- 2 tsp minced ginger
- 1 tsp minced garlic
- 1/4 cup chilli sauce
- 1/4 cup chicken broth or water
- 2 tsp sesame oil
- 1 tsp soy sauce
- 1 tsp cornstarch
- salt
- pepper
- 1/2 cup red bell pepper cubes
- 1/2 cup yellow bell pepper cubes
- 1/2 cup capsicum cubes
- 1/2 cup sliced carrots
- 1/2 cup sliced green beans
Method :-
- Heat oil in a frying pan over medium heat and add the mushrooms, red bell pepper, yellow bell pepper, capsicum and, carrots, green beans and cauliflower and cook until tender.
- Add ginger and garlic to it and cook for about a minute.
- Remove the vegetables from the pan and leave them aside.
- Meanwhile, season the chicken cubes with salt, pepper, soy sauce and oil.
- Heat oil in the pan and add the chicken and cook on both sides until golden brown.
- Add the previously cooked vegetables to the chicken and cook for a couple of minutes.
- Mix cornstarch with water to form a paste and keep aside.
- Mix chilli sauce, soy sauce, sesame oil and chicken broth in a bowl. Pour this mixture over the chicken and vegetables and cook for a while.
- Add the cornstarch paste and cook until the sauce thickens.
- Serve your Chicken & Cauliflower Stir Fry hot.
