Cajun Chicken Salad is made with a remoulade, Tabasco sauce and a little Cajun spice carefully tossed into a bowl of green magic ingredients.
Ingredients :-
- 1 pound boneless chicken breasts, cut into 2 1/2-inch chunks
- Salt
- 1/2 cup mayonnaise
- 2 tbsp mustard
- 1/2 cup chopped celery
- 1/2 cup chopped green pepper
- 1/4 cup chopped green onion
- 1 tbsp cider vinegar
- 1 tsp prepared horse radish
- 2 large hard-boiled eggs, chopped
- 2 tsp paprika
- 1 tsp Cajun seasoning
- Tabasco or other hot sauce
Method :-
- Add the chicken to a well salted boiling water pot. Return to a simmer, then turn off the heat, and cover the pot. Let it sit for 15 minutes or more.
- Mix the mayo, mustard, vinegar, paprika, Cajun seasoning and horse radish together in a bowl. Mix in the eggs, celery, green pepper, green onion.
- Remove the chicken from the poaching water and dice it. Mix it in with the remaining ingredients. Add salt and hot sauce to taste. Chill before serving.
- Serve over butter lettuce.
