Cajun Chicken Salad is made with a remoulade, Tabasco sauce and a little Cajun spice carefully tossed into a bowl of green magic ingredients.

Cajun Chicken Salad is very appetizing

Ingredients :-

  • 1 pound boneless chicken breasts, cut into 2 1/2-inch chunks
  • Salt
  • 1/2 cup mayonnaise
  • 2 tbsp mustard
  • 1/2 cup chopped celery
  • 1/2 cup chopped green pepper
  • 1/4 cup chopped green onion
  • 1 tbsp cider vinegar
  • 1 tsp prepared horse radish
  • 2 large hard-boiled eggs, chopped
  • 2 tsp paprika
  • 1 tsp Cajun seasoning
  • Tabasco or other hot sauce

 

Method :-

  • Add the chicken to a well salted boiling water pot. Return to a simmer, then turn off the heat, and cover the pot. Let it sit for 15 minutes or more.
  • Mix the mayo, mustard, vinegar, paprika, Cajun seasoning and horse radish together in a bowl. Mix in the eggs, celery, green pepper, green onion.
  • Remove the chicken from the poaching water and dice it. Mix it in with the remaining ingredients. Add salt and hot sauce to taste. Chill before serving.
  • Serve over butter lettuce.
