Broccoli Cheddar Soup is the ultimate comfort food which is simple and easy to make and is an absolute delight and a great conversation starter.

Broccoli Cheddar Soup is a great appetizer

Ingredients :-

  • 1 large head or two small heads broccoli, chopped into florets and stems
  • 1/4 cup unsalted butter
  • 4 cups vegetable stock
  • 2 cups whole milk
  • 1 cup grated cheddar cheese
  • 1/2 medium white onion, chopped
  • 1 tsp salt
  • 1/8 tsp freshly ground black pepper
  • 1 small carrot, grated
  • 1/4 cup all-purpose flour
  • Bread, for serving

 

Method :-

  • Bring a pot of water to a boil and add a few pinches of salt. Add broccoli stalks and blanch for a couple of minutes until they are bright green, fork tender and slightly crispy.
  • Drain broccoli. Scoop out and set aside about 1 cup of the florets for the topping.
  • Wipe out the pot and place over medium flame and melt the butter. Add the onions and carrots, and cook for 5 minutes until tender.
  • Stir in the all-purpose flour and cook for a couple of minutes to coat the vegetables, and then start pouring the vegetable stock and stir continuously and bring the soup to a low simmer. Add milk and the blanched broccoli (except the one saved for topping). Simmer for about 10 minutes over low flame.
  • Blend with an immersion blender when the soup is mildly cool.
  • Season with grated cheese, salt, and pepper to the pureed soup and stir over low flame until the cheese has melted. Pour the soup into serving bowls and garnish with the reserved blanched broccoli and extra cheese on top. Serve with bread.
