Avocado Salad With Grilled ChickenAvocado Salad With Grilled Chicken will make your day special especially when you are too lazy to hit the kitchen. You make it by marinating the chicken breasts in orange juice, lemon juice, honey and red chilli flakes. Grill and slice the chicken before mixing with rest of the ingredients.

Ingredients :-

  • 3 tbsp honey
  • 4 tbsp lemon juice
  • 2 tbsp orange juice
  • 1 tbsp red chilli flakes
  • 2 tbsp lemon zest
  • oil
  • 2 chicken breasts
  • salt
  • pepper powder
  • 1 sliced cabbage leaf (boiled in water)
  • 1/2 cup feta cheese
  • 1 cup boiled green peas
  • 1/2 cup sliced onions
  • 1 cup scooped out avocado flesh

Method :-

  • Marinate the chicken breasts in orange juice, 2 tbsp lemon juice, 1 tbsp honey and red chilli flakes for 5 – 6  hours.
  • Heat oil in a frying pan and grill the chicken on both sides for 15 minutes until soft.
  • Slice the chicken breasts and keep them aside.
  • Mix 1/4 cup oil, 2 tbsp lemon juice, 2 tbsp honey, lemon zest, salt and pepper in a bowl and mix well and keep aside.
  • Add sliced cabbage, sliced chicken pieces, green peas, feta cheese, avocado, onions and the above mixture to a bowl, mix well and serve immediately.

 

P.S. You can replace grilled chicken with paneer for “Avocado Salad With Grilled Paneer”.
