Here are 4 simple rice recipes for dinner

Jeera Rice

When You Spoke A Little Longer, Jeera Rice Was The Saviour

Ingredients:-
  • 1/2 cup soaked basmati rice
  • 2 tbsp ghee/oil
  • 2 cardamoms
  • 1 cinnamon stick
  • 5 black peppercorns
  • 1 bay leaf
  • 1 star anise
  • 2 tsp cumin
  • 2 cloves
  • 2 sliced green chillies
  • 1 cup water

Method:-

  • Wash 1/2 cup basmati rice and soak in water for about 30 minutes.
  • Heat ghee in a pan and add bay leaf, cardamom, cinnamon, clove, black peppercorns, star anise, cumin and cook for a minute till the cumin seeds start spluttering.
  • Add the drained rice to the pan with green chillies and saute on medium flame.
  • Add 1 cup water and salt. Cover the lid and simmer for half an hour on low flame till it’s cooked.
  • Serve Jeera Rice hot.

 

Nothing like Mutton Rogan Josh and a bowl of “Kashmiri Pulao” to start the week with

Kashmiri Pulao

Ingredients :-

  • 2 tbsp ghee
  • 1/2 tsp cumin seeds
  • 2 slit green cardamom
  • 1 slit black cardamom
  • 1 bay leaf
  • 3 cloves
  • 1 tsp dry ginger powder
  • Salt
  • 5 black peppercorns
  • 1.5 cup water
  • 1 cup basmati rice
  • 4 saffron strands soaked in 3 tbsp water
  • 1/2 cup onion
  • 6 cashew nuts
  • 10 raisins
  • 5 almonds
  • 1/2 cup paneer cubes

 

Method :-

  • Heat ghee in a pan and add bay leaf, cumin seeds, green and black cardamoms, black peppercorns, cloves and cook till they start spluttering.
  • Add rice, saffron, dry ginger powder, salt, water and cover the pan and cook on low flame.
  • Fry cashew nuts, raisins, almonds in a separate frying pan till they turn golden.
  • Similarly, fry onions until golden brown.
  • Garnish the cooked rice with fried onions, fried dry fruits and paneer cubes.
  • Serve Kashmiri Pulao hot.

 

Chana Dal Pulao for a change

Chan Dal Pulao

  • Soak 1/2 cup basmati rice in water for half an hour and 1/2 cup lentilĀ  (chana dal) for 1 hour respectively.
  • Heat oil in a pan and fry 1 medium size sliced onion along with 1/2 tsp cumin, 1 cardamom, 1 cinnamon, 2 cloves and 1 bay leaf until golden brown.
  • Add 1/2 tsp pepper, salt, 1 green chilli and 1/2 tsp garam masala and cook for a while.
  • Drain the rice and lentil and add to the frying pan.
  • Simmer for a few minutes on low flame.
  • Add water and ghee as required and cook for about half an hour till it softens.
  • Add 1 sliced green chilli for garnishing.
  • Serve Chana Dal Pulao hot.

Peas Pulao

  • Wash 1 cup basmati rice and soak in water for 20 minutes.
  • Heat oil in a pan and add 1 tsp cumin seeds and 3/4 cup of green peas and cook for a minute.
  • Drain the rice and add it in oil along with salt.
  • Simmer for a few minutes on low flame.
  • Add water as required and cook for about half an hour till it is cooked.
  • Serve Peas Pulao hot.
