Pasta with Fresh Tomato Sauce Is Every Mother’s Friend

Pasta with Fresh Tomato Sauce combines the sweetness of cherry tomatoes and the tanginess of sherry vinegar tossed effortlessly with fettuccine for a happy supper.

Ingredients :-

  • 4 cups plum tomatoes, coarsely chopped
  • 3 tbsp  olive oil
  • 1 ½ tsp salt
  • ½ cup finely chopped red bell pepper
  • 1 ½ tbsp rinsed capers, chopped
  • 1 tbsp sherry vinegar
  • 2 cups cherry tomatoes, halved
  • 2 cloves garlic, grated
  • ½ tsp crushed red pepper
  • ½ tsp ground pepper
  • 2 cups fettuccine
  • ½ cup chopped fresh basil

 

Method :-

  • Mix chopped tomatoes, 1 cup cherry tomatoes, bell pepper, capers, garlic, vinegar, salt, ground pepper and crushed red pepper in a food processor until coarsely chunky. Add oil and blend until smooth. Transfer to a bowl and add the remaining 1 cup cherry tomatoes. Cover and refrigerate for a couple of hours.
  • Remove the tomato sauce from the refrigerator half an hour before serving. Bring a saucepan of water to a boil. Cook pasta according to package directions. Drain and add to the sauce along with basil and mix thoroughly. Serve immediately.
